Con Lisa la cucina è Eco
Di blog di cucina ce ne sono sempre di più ma pochi hanno lo stile e l'attenzione di quello di Lisa Casali che con il suo Ecocucina propone ricette e soprattutto consigli per chi ha a cuore non solo il gusto dei piatti ma anche l'ambiente e la qualità del cibo. Noi l'abbiamo conosciuta in tv, dove conduce un bellissimo programma sugli orti nascosti, Orto e Mezzo. Abbiamo voluto incontrarla con questa intervista perché, come noi, è sempre alla ricerca del bello e del buono della terra!


Se fossi un prodotto di stagione, cosa saresti?

Sicuramente il mio frutto preferito, il Caco. Un frutto che adori o detesti, io ovviamente sono della prima categoria. È una delle cose al mondo che mi piacciono di più e lo preferisco a dessert elaborati. Nella sua semplicità il caco è capace di conquistare chi sa andare oltre le apparenze. Per gustarlo tutto l’anno lo congelo e poi lo trasformo in sorbetti.


Si avvicina un periodo dell'anno dove gli sprechi alimentari sono davvero altissimi: ci dai un consiglio per come ridurli al minimo?

Utilizzare le parti meno nobili degli ingredienti è molto semplice, basta sapere quali tecniche usare. Per la buccia della zucca ad esempio cuocetela in pentola coperta di brodo. Con gli scarti dei cavoli provate sia un utilizzo a crudo (per fare mousse, tartare vegetali) o cuocendole (per sformati, ripieni). Con i carciofi invece centrifugate tutte le parti di scarto a crudo e quindi mettete sul fuoco il succo ottenuto. Dopo 30 minuti di riduzione il succo sarà diventato un concentrato di carciofo pronto all’uso e che potete anche congelare nella vaschetta del ghiaccio per averlo pronto quando serve.


In televisione vai "a caccia" di orti: qual è la tua scoperta più bella finora?

Grazie a Orto e mezzo (in onda su Laeffe il venerdì alle 21.10) sto girando tutta Italia in compagnia di Federico Bernocchi, un compagno perfetto per quest’avventura. Grazie a Orto e mezzo ho scoperto che Venezia è piena di bellissimi orti, come quello della Giudecca. Che anche in una città come Milano è possibile vivere con i prodotti del proprio orto come fanno in Via Chiodi. Che ci sono famiglie di miei coetanei come quella di “Capra” e Agnese che hanno lasciato la vita in città per riavvicinarsi alla campagna.


Oltre agli ingredienti, come è possibile essere "eco" con i materiali e gli elettrodomestici della cucina?

È importante imparare a riutilizzare tutte le acque di cottura in modo da produrre brodi sempre più ricchi e nutrienti senza perdere nulla. Mentre si cuoce la pasta si può sfruttare il vapore per cuocere delle verdure e così via. Inoltre non dimenticate di cuocere in lavastoviglie mentre lavate i piatti (trovate tutte le ricette sul mio libro Cucinare in lavastoviglie, Gribaudo, 2011)


Consigliaci un tuo post per chi vorrebbe iniziare a sprecare meno ma continua a rimandare:

Se siete amanti dei centrifugati dovete assolutamente imparare a usare la polpa di scarto perché è un ingrediente buonissimo e pronto all’uso, ad esempio per preparare una torta di frutta. Trovate questa ricetta sul mio blog.

We wanted to know her because, like us, she is always looking for the beauty and goodness of the ground!


If you would be a product of the season, what would be ?

Definitely my favorite fruit the persimmon. A fruit that you love or hate, I am obviously in the first category. It's one of the things in the world that I like better and I prefer than elaborate desserts . In its simplicity, the persimmon is capable of winning over those who can go beyond appearances. To taste all year i freeze it and then turned it into sorbet.


Approaching a time of year where food waste are very high : you give us some advice about how to minimize them?

Using the less noble parts of the ingredients is very simple, you just to know what techniques to use. The pumpkin peel you can cook in a covered pot of broth. With scraps of cabbage, and try to use it raw (to make mousse, vegetable tartare) or cooking them ( or casseroles, stuffed) . With artichokes centrifuged all waste parts to raw and then put the juice on a pan. After 30 minutes of reducing the juice will become a concentrate of artichoke ready to use and you can also freeze it to have it ready when you need it.

In your show you go "hunting" of gardens: what is the most beautiful discovery so far?

Thanks to “Garden and a half” (Laeffe broadcast on Fridays at 21.10) I'm shooting all over Italy with Federico Bernocchi, a perfect companion for this adventure. So I discovered that Venice is full of beautiful gardens, like the Giudecca and even in a city like Milan you can live with home-grown produce as some people does in Via Chiodi. That there are peers families such as " Goat " and “Agnes” who left life in the city to re-connect to the farmland.


In addition to the ingredients, how can you be "eco" with the kitchen appliances?


It is important to learn to reuse all the cooking water in order to produce more and more nutrient-
rich broths without losing anything. While the pasta is cooking you can use the steam to cook the vegetables and so on. Also do not forget to cook while you do the dishes in the dishwasher (find all the recipes in my book Cooking in the dishwasher, Gribaudo, 2011)
